Meat racks are the way to go if you can, or if you have a few battens dead hung US that is reachable rather easily also works. Keeping them hung is usually the best idea.

I am intrigued. Can you include pictures while building one of these?

I had our Vocational Agriculture class weld together a meat wagon out of some schedule 40 pipe that I had laying around. The welds are a bit chunky (they were just learning how to weld) but the teacher (a certified welder) said that they still got good penetration on their welds. I personally couldn't be happier with it.
I then bolted it onto an old stage wagon for mobility purposes. It currently has space to hold 24 ellipsoidals or 6" fresnels and also has "hooks" welded onto the sides from which to hang unused cabling.

Heres a rough CAD drawing that I had laying around in PDF form. This was designed to use in a space that had storage underneath the stage accessed through an orchestra pit lift and double doors. I believe 4" casters were put on it, also additional bracing was added. Its made out of 2x2 .065 MT1010 and 1 1/2" sch. 40 black pipe.
