Does anyone know of a program that would allow us to run multiple digital projectors off of one Mac? Each projector needs to have its own video channel. There's a total of 3 projectors.

Sure, Catalyst.

The triple head to go will do what you need to do with very little cost. It basically tricks your video card into thinking it has 1 3840x1024 monitor hooked up to it and splits the image into 3 1280x1024 outputs. I used it on a show last month to do the exact same thing and it worked seamlessly. This works if you are wanting the same content split accross 3 screens like a panorama, if you want 3 totally seperate things going on, you will need 3 seperate pcs. The high end version of this is the watchout system by Dataton.
