The Last musical I did, I rented 4 PCC-160's. The Orchestra director taped over the back grill of the Mic. Is there ant side effect of doing this (frequency response, polar pattern, Gain before Feedback)

All of the above. It affects the polar pattern directly, and the polar pattern affects gain before feedback. It can also affect the polar pattern differently at different frequencies, thus altering the frequency response in the area of interest.

basically your director turned the aforementioned mic into an omnidirectional microphone - so it would pick up sound from all directions, and if you had monitor speakers behing the microphone then your chances of getting feedback would certainly increase
