tall walls

Good morning... I'm currently building a set for Man of La Mancha and the highest point will be 16'... I'll eventually go down to 10-12' but all they really have in stock are standard 8' hollywood flats so there's really no future use for 12-16' walls... My question is can I use the 8' walls in stock and just attach another one on top? Or lets say I want a 8x12 wall... could I use two 4x8 standing straight up with another 4x8 laying across the top? Make sense? I wouldn't need to go higher than 12'-14'... I've attached a pic of the sketch I have for the walls and heights...

As long as you properly brace, attach, and support the flats, it should be fine. I do this all the time at my theater.
 
If they're true Hollywood flats, I would make join them to each other with screws or c-clamps and add 1 x 3 or 1 x 4 screwed flat to the to each edge/seam. Depending on the thickness of the frame of the flats you might use 3" screws.
If the flats are in a straight run, you will need to add some jack braces to support the wall.
Be very careful to secure the area around the doorway. You should work to make that area very sturdy.
 
I would run hog's trough across the back of the flats in order to support the seams and use large jacks or perpendicular flats to support it from falling, you could even run some GAC to something overhead if you feel like its not supported enough.
