That is correct. Element and Ion only support a maximum of two displays.

If you have nomad you can use that as an extra view into the show effectively giving you more displays.
 
This has to be a nomad dongle, right? Free offline editor won't work?

You can mirror without the dongle, but it's an identical screen of what is on the Element. This also serves as a convenient backup since a copy will be saved to your laptop anytime you save on the Element.

If you have the dongle, you can connect as a client and then you can view whatever you want. If you are the same user as the primary (in this case the Element) you will share the command line as well as any live/blind instructions. So if on the client you are looking at the patch and then hit [Live] on the Element, your client will also jump to the live tab. If you are a different user you will have a separate command line and can be wherever you want.

Depending on what you want the third monitor for, OSC is potentially a viable option if you want to be inputting data more so than displaying it.

When I've programmed on the Ion, I'll set up the two displays plus my laptop as a client and run TouchOSC on my iPad to have a custom layout of keys, macros, and other things quickly at my disposal. Because my laptop is connected I don't have to worry about backups as much since I have a copy of the show file on the desk and my laptop, which actually came in handy once when the Ion I was programming decided it no longer wanted to work 20 minutes before preview. I was able to frantically get the Element in and the show loaded and we started almost on time.
