Oh, we do. Running a practical at full voltage actually looks wrong, usually, it's just too bright when fitted with the correct lamp. Desk lamps at 50% and wall fittings at 40-60% is what we usually end up with. Often, providing the pool of light from a stage lamp and just having the practical at a low level to provide the in-fitting glow can look better than running the practical at full power.
