This company, Pevnick Design, does the most amazing things I've ever seen with water. I first saw them in the Kohler booth at a trade show in 1991. See also Aqua Reign and Aqua Visual FX, both of whom exhibited at LDI 2008 in Las Vegas.
Another good company, which also does some amazing work, but from the bottom up, is Wet Design.
Some may remember Liberace's shows, featuring Dancing Waters®. They're still around also.
