I Agree that the cheapest way to do this is using a dual or Triple head to go box.
Perhaps you can rent one. My recommendation (based on your budget) would be to create a black stripe between the 2 screens so you dont have to try to align the two images. this could be done using a painted 1x2...

I absolutely agree that the Ion is a great console with lots features and if you are a full time lighting guy it is intuitive and easy to use, in fact i enjoy working on them. I work in an environment with lots of volunteers/newbies and for them the learning curve can be high.
Another PC Software suggestion.
StageSoft WAVE can do this. set up your show/playback audio files and send midi commands to your lighting console (StageSoft also has a lighting program thats way easier to program than the ION.). if you have a digital console it can even control the faders...
The o1v96 has 40 inputs
12 analog xlr inputs
4 channels via 1/4 balanced inputs(line level),
8 inputs via adat lightpipe
16 more inputs that are available via an expansion card.
So the stock 01v96 has 16 analog inputs available

If you are sending VGA signals do yourself a favor and by a pair of extron vga cat 5 extenders(vtt001/vtr001) or intelix( vga-hr or vga-uhr) they have fantastic picture quality. Most of the cheaper units end up with a washed out picture.
