Control/Dimming Question about Roller Rink Install

Hello fellow photon flingers! I've been tasked with spec'ing and programming a new control system for a roller rink. One of the main things I would like to have is to be able to lock out patch and programming so that it doesn't get messed with by anyone that happens to get their hands on it. I've been told that light factory has settings that allow only certain users to edit anything. Are there any other programs that have this option? Has anyone designed a system for a similar situation and has found a program and control surface that works well? Thanks!!
