I have a very similar setup at my venue. Somewhere in the building, there should be a main house light controller. You should be able to plug an Ethernet cord in there connected to a computer and then login to the web interface using the IP address on the controller panel.

ETC makes an external programming wing that works with the offline software and can also output DMX. They are pretty hard to find though
