It'll be much easier and cheaper to buy something premade. Wiring something like that up from scratch may sound like fun, but in reality it will be very time consuming and monotonous.
Just use SPT-1 cord and sockets. Super easy to place the sockets wherever you want. (Just watch your lamp wattage and don't overload the wiring) All you do is snap them onto the wire.
For us, the greatest amount of time was invested in building and installing the framework to hold everything (~16x48 ft). We used a scissor lift and a series of pulleys to get the upper portion installed as a single unit (no fly system in our borrowed space)
