I am looking for information about the 5 P's to fire watch in other venues. Protocol, procedure, policeis, personel, pricing. Any information would be great for me to develop our 5 P's in my house.

Have you reached out to your local Fire Marshal? AHJ preferences vary greatly by region and even county, so I would reach out to them since ultimately their opinion matters the most.
