I've done a moderate bit of Paradigm work, but not with a E-streamer. From the looks of the manual you have quite a list of communications methods.

Relevant questions concern your goals. Exactly what kind of control do you want? Direct DMX/ArtNet gives simple stuff on a fader. Paradigm does RS232/UDP very easily but you have to supply the logic. Simple start/stop buttons? Show selection and recording gets trickier.

Does anyone have experience with setting up Paradigm to control the output on an EntTec E-Streamer?

Do you have access to ETC's Light Designer software? This is typically a technician tool, but you can also purchase training for it as an end-user (software is technically free, but in order to get it you have to be trained). If you don't have it, then you will need help from an ETC certified tech in order to make changes to your Paradigm configuration.
